I always do mine in the crock pot because it comes out so tender and is super easy. but my grandmother does hers in the oven, which I like too. for the gravy, it's very simple. when pot roast is done, take out about 1/2 cup of the juices and let cool a bit. stir in a little corn starch, then pour mixture back into your roast. let simmer a couple of minutes, and there you have gravy.
